Eggcellent Light Meals

Looking to switch up your diet this autumn? Why not fill your tummy with light healthy meals. Whether you're having a spot of lunch, or looking for a post workout meal, here are some delicious recipes you can try. All dishes include a great source of protein; eggs. 

1. Salmon Salad with poached eggs. 


What you'll need: Eggs, Salmon, Courgette, Rocket, Watercress, Avocado & Seasonings. 

How to make: Peel your courgette into long strips, peel your avocado and place onto a plate. Add a handful of rocket & watercress and mix together. Take your raw salmon and add it to the dish, displayed however you like. I like to twist them up into little swirls. To poach your eggs, boil water until bubbling. Add a little vinegar to the pan (This helps the egg stay together). Swirl the water until there is a whirlpool in the saucepan, then crack your egg into the pan. Four minutes of boiling time will leave a soft egg yolk. Take the eggs out of the saucepan and add to your salad. I just season with a little salt and black pepper, however if you want to add olive oil or salad dressing be my guest. 


 2. Chilli avocado on toast, with poached eggs. 


What you'll need: Bread, Avocado, Eggs, Chilli flakes, Olive oil & Lime. 

How to make: This one is super simple. I discovered this recipe at Bills, however it is so easy to create at home in the comfort of your own kitchen. Peel your avocado and cut into cubes. Add olive oil (chilli oil if you have it) and chilli flakes and mix all together. Toast your bread, (add butter if you like) and poach your eggs. Again, wait for the water to boil, and crack your egg into a whirlpool of water. I like to leave my egg for four minutes. Once ready, place the avocado and egg on top of your toast. Season with salt, pepper and a squeeze of lime. 


3. Kale & Egg Salad. 


What you'll need: Eggs, Kale, Avocado, mayonnaise & Seasonings.

How to make: Boil your Kale until desired preference, (I like mine soft, some prefer theirs crunchy). Peel avocado and cut into cubes, place on top of the kale. Boil eggs in shell for five minutes. (Five minutes still creates a soft yolk, but a little harder than the poached eggs in the recipes before). Once eggs are boiled, let them cool and peel off the shell. Chop up eggs, add a little organic mayonnaise. Add eggs to the salad and season with a little salt and black pepper.
